Cheesy Beef Noodle Casserole
This hearty casserole offers a satisfying alternative to lasagne, featuring layers of savoury ground beef cooked with onions, garlic, and mushrooms in a tomato sauce. The dish is assembled with buttered noodles and a creamy blend of cream cheese and sour cream, then topped with a trio of cheeses and baked until golden and bubbling. Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 garlic clove, minced
- 1 cup sliced mushrooms
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon italian seasoning
- 1 (14 ounce) can tomato sauce
- 1 (14 ounce) can tomatoes
- 1 (4 ounce) package cream cheese, softened
- 1 cup sour cream
- 1/4 cup green onion, chopped
- 8 ounces medium noodles, uncooked
- 1 tablespoon butter
- 2 cups mozzarella cheese, shredded
- 1/4 cup cheddar cheese, shredded
- 1/4 cup parmesan cheese, grated
Method
- Cook the ground beef with the chopped onion and minced garlic until browned, then drain off any fat.
- Add the sliced mushrooms, salt, pepper, Italian seasoning, tomato sauce, and canned tomatoes to the pan. Cover the mixture and let it simmer for about 20 minutes. Check the seasoning and adjust if needed.
- In a separate bowl, combine the softened cream cheese with the sour cream and chopped green onions until smooth.
- Boil the medium noodles in salted water until they are nearly tender. Drain them and mix with the butter. Take a buttered 9 x 13 inch baking dish and arrange roughly half of the noodles in an even layer. Spoon over half of the meat sauce, then spread half of the cream cheese mixture on top.
- Create another identical layer with the remaining noodles, meat sauce, and cream cheese mixture.
- Scatter the shredded mozzarella, cheddar, and grated parmesan cheeses evenly over the top layer.
- Place the dish in an oven preheated to 350° and bake for 45 minutes, or until the casserole is hot and bubbling.
