This elegant layered torte makes a stunning centrepiece for special occasions. It combines finely chopped hard-boiled eggs with mayonnaise, a creamy blend of cream cheese and sour cream, and sweet onion. After chilling, it is decorated with caviar in a decorative pattern before being served with crackers. Its sophisticated flavour profile is always a conversation starter at gatherings.

Caviar Torte

Ingredients

  • 6 hard-boiled eggs, very finely chopped
  • 3 tablespoons mayonnaise
  • salt and pepper
  • 1 sweet onion, very finely chopped
  • 8 ounces cream cheese
  • 2/3 cup sour cream
  • black caviar
  • 20 crackers, to serve

Method

  1. Combine the ingredients for the bottom layer and press this mixture into an 8 inch springform pan.
  2. Spread the middle layer over the base, then prepare and add the top layer ingredients.
  3. Refrigerate the assembled torte overnight.
  4. Employ a cookie cutter on the chilled surface and fill the resulting shape with caviar to create an attractive pattern.
  5. For a wedding, we selected a heart shape, filling it with salmon roe and arranging more around the border to complement our orange colour scheme.
  6. Another beautiful presentation uses a small red caviar heart in the centre, encircled by black caviar around the outer edges.
  7. Detach the pan's sides and present the torte alongside crackers for serving.
