This Chinese recipe creates flavourful tofu planks infused with a classic five-spice blend. Firm tofu is simmered in a savoury broth of tamari, water, star anise, and molasses, then left to marinate. The method is straightforward, though the marinating time is additional. The finished tofu can be used immediately or stored for later use.

5-Spice Tofu

Ingredients

  • 2 cakes firm tofu, 14 oz each
  • 3 tablespoons tamari soy sauce
  • 3/4 cup water
  • 1/4 teaspoon five-spice powder
  • 2 whole stars star anise
  • 1 teaspoon molasses

Method

  1. Slice each tofu cake in half horizontally.
  2. Place the tamari, water, five-spice powder, star anise, and molasses into a pan large enough to hold the tofu slices in one layer and bring the liquid to a boil.
  3. Gently add the tofu to the pan, reduce the heat, and let it simmer uncovered for 10 minutes.
  4. Take the pan off the heat, cover it, and allow the tofu to marinate for 3 hours, turning the pieces now and then.
  5. Drain the tofu planks and use them straight away, or wrap them in plastic for storage for up to a week.
