5-Layer Seafood Appetizer
This elegant layered appetiser is ideal for a cocktail party or game day gathering. It features five distinct strata, beginning with a seasoned cream cheese base, followed by chilli sauce, crisp cucumber and spring onion, succulent seafood, and a final topping of cheese and optional jalapeños. The dish is assembled in a shallow serving platter and chilled before being presented with crackers. It can be prepared with either fresh shrimp or crab meat for a delicious centrepiece.
Ingredients
- 8 ounces fat free cream cheese
- 2 teaspoons horseradish
- 1/2 teaspoon Worcestershire sauce
- 4 teaspoons light mayonnaise
- 2 teaspoons lemon juice
- 12 ounces Heinz Chili Sauce
- 1 bunch green onion
- 2/3 cup cucumber, seeds removed,peeled and chopped
- 3/4 lb shrimp (peeled, cooked and coarsely chopped) or 3/4 lb lump backfin crab meat
- 1 ounce shredded sharp cheddar cheese (1/4 cup)
- 1/4 cup canned sliced jalapeno pepper (optional)
Method
- Cook the shrimp until they turn pink.
- Drain the cooked shrimp and allow them to cool.
- For the base, combine the cream cheese, horseradish, Worcestershire sauce, mayonnaise, and lemon juice, then spread this mixture into a shallow dish.
- A round dish with a flat base and low sides works well for this.
- Next, evenly coat the bottom layer with the chilli sauce.
- Prepare the cucumber by pressing it between sheets of paper towel to absorb any extra liquid.
- Scatter the dried cucumber and chopped green onion over the chilli sauce.
- Distribute the chopped shrimp or crab meat over the vegetable layer.
- Finish by sprinkling the shredded cheddar and optional jalapeño slices on top.
- Cover the assembled dish with cling film and refrigerate it.
- Present with crackers and a knife for spreading.
