5-Ingredient Cracker Toffee
This straightforward toffee recipe uses saltine crackers as its base. A homemade caramel made from butter and brown sugar is poured over the crackers before baking. The hot caramel is then topped with chocolate chips and pecans. After a brief chill, it sets into a crisp, sweet confection ideal for sharing at gatherings. The recipe yields about 40 pieces.
Ingredients
- 40 saltine crackers (I've used Ritz too, and graham crackers too for extra sweet candy. Add a pinch of salt over grahams!)
- 1 cup butter (2 sticks, I use salted)
- 1 cup dark brown sugar, packed
- 1 cup semi-sweet chocolate chips
- 1 cup pecans, chopped
Method
- Preheat the oven to 400 degrees.
- Cover a cookie sheet with aluminium foil, optionally spraying it with non-stick spray. Arrange the crackers side by side on the tray to create a large rectangle.
- In a saucepan, mix the butter and brown sugar. Stir continuously over high heat until it boils, then cook for 3 minutes. Pour this caramel over the crackers and spread it to the edges.
- Bake for 5 minutes. Remove the tray and scatter the chocolate chips evenly on top. Bake for 3 minutes more, then take it out and spread the softened chocolate over the caramel.
- Switch the oven to a high broil setting. Sprinkle the chopped pecans evenly over the chocolate and return the tray to the oven for up to a minute, watching it closely.
- Place the tray in the freezer for 15 minutes or until the toffee is firm. Remove the foil and break the sheet into pieces. Keep the toffee in a sealed container in the fridge.
