Kielbasa and Black Bean Soup

Ingredients

  • 1 teaspoon canola oil
  • 1/2 lb turkey kielbasa, low-fat, thinly sliced
  • 2 small carrots, chopped
  • 1 celery, chopped
  • 1/2 red bell pepper, chopped
  • 4 cups chicken broth, reduced sodium
  • 15 ounces black beans, rinsed & drained
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 10 ounces frozen chopped spinach, squeezed and dry

Method

  1. Warm the canola oil in a large nonstick skillet.
  2. Cook the sliced turkey kielbasa until it begins to brown lightly.
  3. Introduce the carrots, celery, red bell pepper, chicken broth, black beans, oregano and pepper to the pan, then bring the mixture up to a boil.
  4. Lower the heat and allow the soup to simmer for about 10 min, or until the vegetables have softened.
  5. Stir in the squeezed dry spinach and continue cooking just until everything is thoroughly heated.
