Kielbasa and Black Bean Soup
This quick and hearty soup combines lean turkey kielbasa with nutritious black beans and a mix of chopped vegetables. Ingredients
- 1 teaspoon canola oil
- 1/2 lb turkey kielbasa, low-fat, thinly sliced
- 2 small carrots, chopped
- 1 celery, chopped
- 1/2 red bell pepper, chopped
- 4 cups chicken broth, reduced sodium
- 15 ounces black beans, rinsed & drained
- 1/2 teaspoon oregano
- 1/4 teaspoon pepper
- 10 ounces frozen chopped spinach, squeezed and dry
Method
- Warm the canola oil in a large nonstick skillet.
- Cook the sliced turkey kielbasa until it begins to brown lightly.
- Introduce the carrots, celery, red bell pepper, chicken broth, black beans, oregano and pepper to the pan, then bring the mixture up to a boil.
- Lower the heat and allow the soup to simmer for about 10 min, or until the vegetables have softened.
- Stir in the squeezed dry spinach and continue cooking just until everything is thoroughly heated.
