3 Legume Butter
This unique spread offers a creative twist on traditional nut butters by combining three different legumes. Peanuts, soybeans and kidney beans are processed together into a smooth, spreadable consistency. The recipe allows you to adjust the final flavour with your preferred amount of salt or sugar. It yields approximately 13 servings, perfect for sandwiches or snacks.
Ingredients
- 1/4 cup dry roasted soybeans
- 1 2/3 tablespoons uncooked kidney beans, soaked and roasted (see <a href="https://www.food.com/recipe/soynuts-473999">Soynuts</a> for a guide)
- 11 ounces raw peanuts
- 1/4 cup canola oil
- water, as needed
- salt, and sugar as desired
Method
- Place the roasted soybeans and roasted kidney beans into a food processor or blender and cover them with boiling water. Allow them to soak for 30 minutes.
- Process the soaked beans until they are finely ground. Next, add the raw peanuts and continue processing until the contents form a cohesive, dough-like mixture.
- With the processor running, slowly pour in the canola oil. Then, add water a little at a time until you achieve a texture that is easy to spread.
- Add your chosen amount of salt and sugar to the mixture. Process everything once more until completely smooth.
