This healthy and tasty dish features large shrimp that stay succulent. They are quickly seared and then simmered in a glossy, reduced sauce made from balsamic vinegar, soy sauce, and sugar, with fresh ginger, garlic, and cherry tomatoes. 3-2-1 Shrimp

Ingredients

  • 1 1/2 cups balsamic vinegar
  • 1/2 cup sugar
  • 1/4 cup soy sauce
  • 1 1/2 lbs large shrimp, uncooked
  • 1 tablespoon minced fresh garlic
  • 1 tablespoon minced fresh ginger
  • 1/2 pint cherry tomatoes, cut in half
  • 2 -3 tablespoons butter
  • canola oil, to cook
  • salt
  • pepper

Method

  1. Combine the balsamic vinegar, soy sauce, and sugar in a bowl, stirring until the sugar has fully dissolved.
  2. Heat a small amount of canola oil in a saute pan. Place the shrimp in the hot pan and sear them until they just begin to turn pink, then season with salt and pepper.
  3. Introduce the minced garlic and ginger to the pan with the shrimp, cooking them for about 45 seconds until their aroma is released.
  4. Pour the prepared vinegar mixture into the pan and add the halved cherry tomatoes. Allow everything to simmer until the liquid volume has reduced by 1/2.
  5. Stir in 2 tablespoons of butter, whisking it into the sauce until incorporated. Serve the shrimp and sauce over rice or mashed potatoes.
