Pepper & Lemon Swordfish Steaks
This healthy dish features swordfish steaks cooked in individual foil packets with fresh lemon, red onion, rosemary, thyme, black pepper and salt. Ingredients
- 1 1/4 lbs swordfish steaks, 1 inch thick cut into 4 equal pieces
- 2 lemons, thinly sliced
- 3/4 red onion, thinly sliced
- 2 tablespoons minced fresh rosemary leaves
- 1 tablespoon minced fresh thyme leave
- 1 teaspoon fresh coarse ground black pepper
- 1/4 teaspoon salt
Method
- Set your oven to 500 degrees or get your grill ready for cooking.
- Lay each portion of swordfish in the middle of a double layer of foil.
- Distribute the lemon slices, onion, rosemary, thyme, pepper and salt evenly over each piece of fish.
- Create sealed packets by lifting the two long sides of the foil to meet above the fish and folding the edges down, then fold the short ends together.
- Crimp all the edges securely, leaving some space inside for expansion.
- If using the oven, arrange the packets on a baking tray.
- Cook by baking or grilling until the fish turns opaque, which will take 10-12 minutes.
- Be cautious when opening the packets to check if the fish is done, as hot steam will be released.
