Chinese Buffet Black Pepper Chicken
Recreate a popular Chinese buffet dish in your own kitchen. This recipe features cubes of chicken, dusted in cornstarch and fried until golden, then tossed with diced onion, peas, and carrots in a rich sauce flavoured with oyster sauce, soy sauce, and both black and white pepper. It's a quick and satisfying meal, perfect served over a bed of steamed rice.
Ingredients
- 1 lb boneless skinless chicken breast (or thighs)
- 6 tablespoons cornstarch (for dusting)
- 1 white onion, diced
- 1 cup frozen peas and carrot
- oil (for frying)
- 1/4 cup oyster sauce
- 1 teaspoon soy sauce
- 1 teaspoon black pepper
- 1/2 teaspoon white pepper
- 1 teaspoon sake or 1 teaspoon rice wine
Method
- Combine all the sauce ingredients in a bowl and set this mixture aside.
- Slice the chicken into 1/2" cubes, then coat each piece thoroughly with cornstarch.
- Fry the coated chicken in batches without oil until the pieces turn a golden brown colour, then transfer them to drain on paper towels.
- Place 1 tbsp of oil in the pan, add the diced onion and cook for a few minutes before introducing the frozen peas and carrots, stir frying for another few minutes.
- Pour the prepared sauce into the pan with the vegetables and warm it through, then add the cooked chicken and toss everything until the chicken is fully coated in sauce.
- Serve the finished dish alongside rice.
