2 Minute Carbonara
This speedy carbonara recipe transforms a packet of two-minute noodles into a satisfying meal. It combines ham, mushrooms, spring onions and garlic in a creamy sauce enriched with egg. Finished with fresh basil and parmesan, it's a fast and flavourful dish perfect for a solo dinner. The entire process takes only about 10 minutes from start to finish.
Ingredients
- 1 (85 g) Maggi 2-minute noodles (packet, DO NOT use flavour sachet)
- 50 g ham
- 2 basil leaves
- 2 mixed mushrooms
- 2 spring onions
- 1 small garlic clove
- 50 ml thickened cream (double cream)
- 1 egg
- salt and pepper
- parmesan cheese (grated or shaved to taste)
- olive oil
Method
- Prepare the noodles according to the packet directions, discarding any included flavour sachet.
- Finely dice the ham, mushrooms, spring onions and garlic clove.
- Heat a splash of olive oil in a frying pan and cook the chopped ingredients for 1 minute.
- Pour in the cream and heat it through completely before adding the drained noodles along with a little of their cooking water.
- Crack the egg into the pan and stir it through the noodles until combined.
- Season the dish with salt and pepper according to your preference.
- Garnish with shredded basil leaves and a sprinkle of parmesan cheese before serving.
