15 Minute Braised Fennel Salmon
This quick salmon dish features tender fillets cooked atop braised fennel in a light broth and lemon juice. The entire meal comes together in a single pan in only 15 minutes, making it an ideal choice for a speedy yet sophisticated dinner. Ingredients
- 1 1/2 lbs salmon fillets, cut into 8 pieces skin and bones removed
- 1/4 cup chicken broth or 1/4 cup vegetable broth
- 1 tablespoon chicken or 1 tablespoon vegetable broth
- 1 large fennel bulb, sliced thin save 1 TBS chopped green tops to use for garnish
- 2 tablespoons fresh squeezed lemon juice
- salt
- fresh cracked black pepper
Method
- Lightly season the salmon pieces with salt and white pepper, then set them aside.
- Warm one tablespoon of broth in a 10 to 12 inch stainless steel skillet. Add the thinly sliced fennel bulb and sauté it in the broth for 1 minute, stirring continuously.
- Pour in the remaining half cup of broth along with the lemon juice, a pinch of salt, and pepper. Place the seasoned salmon fillets on top of the fennel.
- Lower the heat, cover the skillet, and allow it to cook for approximately 5 minutes.
- Be careful not to overcook the fennel, as this can diminish its distinctive flavour.
- Finish by scattering the reserved chopped fennel tops over the dish. Taste and adjust the seasoning if needed before serving.
