1-Hour Ham and Bean Soup
This satisfying ham and bean soup is a convenient one-pot creation. It skips the lengthy soaking process for dried beans, using tinned beans instead to deliver a rich, homemade flavour in just about an hour. The method involves sautéing vegetables and ham, then blending a portion of the beans to create a wonderfully thick and creamy soup base.
Ingredients
- 2 tablespoons vegetable oil
- 1 cup diced or sliced carrot
- 1 cup diced celery
- 1 cup chopped onion
- 2 cups diced ham
- 1/2 teaspoon minced garlic
- 3 1/2 cups ham stock (water can be substituted) or 3 1/2 cups chicken broth (water can be substituted)
- 2 (15 1/2 ounce) cans great northern beans, not drained
- 3 -4 tablespoons tomato sauce

Method
- Warm the vegetable oil in a large soup pot.
- Place the carrot, celery and onion into the pot.
- Cook the vegetables for roughly 4 minutes, until the onion starts to become tender.
- Introduce the diced ham and cook for a further 2 minutes.
- Stir in the garlic and cook for one more minute.
- Pour in 3 cups of the stock and bring it to a gentle boil for about 10 minutes, stirring occasionally.
- While that cooks, put most of the beans with their liquid and the tomato sauce into a food processor, reserving half a can.
- Blend these ingredients until completely smooth.
- Add the leftover stock to the processor to help thin the puree.
- Blend again to combine everything.
- Pour the smooth bean mixture from the processor into the pot with the ham.
- Add the reserved half can of beans, stir well, bring to a boil, then reduce the heat, cover the pot and let it simmer for 30 minutes.
- Serve the soup while it is hot.
