This satisfying one-dish meal is a family favourite that comes together quickly. Italian sausage is browned and combined with sautéed bell peppers, onion, and garlic, then simmered with stewed tomatoes and Romano cheese. The mixture is spooned over al dente rotini pasta and finished with a sprinkle of Parmigiano-Reggiano and fresh basil leaves for a complete and flavourful dinner.

Italian Pepper and Sausage Dinner

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 lb Italian sausage, sweet and taken out of the casing (or ask the butcher for the ground sausage meat..it saves time)
  • 1 red bell pepper, sliced thinly
  • 1 yellow bell pepper, sliced thinly
  • 1 large yellow onion, sliced
  • 3 garlic cloves, finely minced
  • 2 1/2 cups stewed tomatoes
  • 2 tablespoons fresh basil, chopped
  • salt
  • fresh ground pepper
  • 2 tablespoons romano cheese
  • grated parmigiano-reggiano cheese, to sprinkle over finished dish
  • top with a few fresh basil leaf
  • 1 lb muti-flavored rotini noodles, cooked al dante

Method

  1. Cook the sausage in a large skillet until it is browned all over and no longer pink.
  2. Transfer the cooked sausage to paper towels to drain away any excess fat.
  3. Heat the olive oil in the same pan and cook the sliced peppers and onion until the onion turns translucent.
  4. Add the minced garlic to the pan and cook it briefly without letting it colour.
  5. The aim is to have the vegetables softened but not mushy.
  6. Pour in the stewed tomatoes and add the basil, salt, pepper, Romano cheese, and the cooked sausage.
  7. Place a lid on the skillet and let everything simmer together for 8-10 minute.
  8. Should the sauce become too thick, you may loosen it with a splash of water or red wine.
  9. Meanwhile, cook the rotini pasta in boiling water according to the packet instructions.
  10. The pasta should be drained when it is still firm to the bite.
  11. Aim for a texture that is al dente.
  12. To assemble the dish, select a large serving platter.
  13. Spread the cooked pasta over the platter first, then ladle the sausage and pepper mixture on top.
  14. Give everything a gentle toss to combine.
  15. Finish by scattering over the grated Parmigiano-Reggiano and arranging a few fresh basil leaves on top.
  16. This dish pairs nicely with a robust red wine, a simple green salad with Italian dressing, and crusty bread.
