Lemon Pepper Chicken Breasts on a Bed of Rice

Ingredients

  • 1 cup long grain white rice
  • 14 ounces chicken broth
  • 5 tablespoons mccormick california style lemon pepper
  • 1/2 cup of melted margarine
  • 4 boneless skinless chicken breasts, thin sliced or tenderloins only

Method

  1. Set your oven to heat to 350.
  2. Season both sides of the chicken breasts with the lemon pepper seasoning, adjusting the quantity to your preference.
  3. Arrange the seasoned chicken in a 9x13 inch glass baking dish that has not been greased. Pour the melted margarine over the chicken and cover the dish.
  4. Place the covered dish in the oven and bake for 30 Minutes.
  5. Take the dish out of the oven. Transfer the chicken to a plate and set it aside. Pour the long grain white rice and chicken broth into the baking dish, then stir to combine. Cover the dish tightly with aluminium foil.
  6. Return the covered dish to the oven.
  7. Continue baking for 30 Minutes.
  8. Remove the dish from the oven once more and place the reserved chicken pieces back inside.
  9. Bake the combined dish for a final 15 minutes.
