Ingredients

  • 2 cups cream
  • 2/3 cup light corn syrup
  • 2/3 cup honey
  • 1 cup sugar
  • 4 ounces soft unsalted butter
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon vanilla extract
  • 8 ounces walnuts, toasted and chopped
  • 1/4 teaspoon sea salt

Method

  1. Lightly grease a 9 by 9 inch pan, including the sides. Place a piece of parchment paper on the bottom and grease its surface as well. Set the pan aside.
  2. In a large cooking pot, mix the cream, corn syrup, honey and sugar. Place over heat and cook, stirring frequently, until the mixture reaches 260F. This should take around 25 minutes.
  3. Take the pot off the heat. Add the butter, kosher salt and vanilla, stirring to combine. Gently fold the toasted, chopped walnuts into the mixture. Transfer the caramel to your prepared pan. Evenly sprinkle the sea salt across the top. Allow the caramel to cool completely. Once set, carefully run a knife around the pan's inner edge and turn it over onto a cutting board. Slice the slab into 1 inch squares. Wrap each caramel piece in waxed paper.
