Blow Your Socks Off Beef and Wild Game Marinade
This powerful marinade is designed to tenderise and deeply flavour beef or wild game. It simmers a rich base of red wine, olive oil, and chopped vegetables with fresh herbs, garlic, and peppercorns. After cooking, the liquid is strained and used to marinate the meat in the fridge for a full day, ensuring maximum flavour penetration. Ingredients
- 1/2 cup olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 2 stalks celery, chopped
- 3 cups red wine (only use stuff you would drink yourself)
- 2 cups water
- 2 bay leaves
- 2 tablespoons fresh thyme, chopped
- 3 tablespoons fresh basil, chopped
- 1/4 cup chopped fresh parsley
- 5 cloves garlic, peeled and crushed
- 14 peppercorns
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1 teaspoon soy sauce
Method
- Place all the listed ingredients into a deep pan and allow them to cook together for 3 hours.
- Pass the cooked mixture through a strainer, then use the liquid to marinate your chosen beef or game meat for 12-24 hours while refrigerated.
