Red Beans and Rice - Slow Cooker
This Louisiana classic is the ultimate comfort food, made conveniently in a slow cooker. Dried red beans are simmered for hours with andouille sausage, smoked ham, and a classic vegetable trinity, all seasoned with a robust blend of Creole spices. The result is a thick, flavourful bean stew served over a bed of fluffy white rice. It's a hearty, crowd-pleasing meal perfect for any gathering.
Ingredients
- 1 lb dried red beans, rinsed
- 1/2 lb andouille sausage, sliced
- 1/2 lb smoked ham, diced
- 1 cup white onion, finely diced
- 1 cup celery rib, finely diced
- 1/2 cup green pepper, finely diced
- 1/2 cup red pepper, finely diced
- 3 garlic cloves, pressed
- 1 tablespoon chili powder
- 1/2 tablespoon creole seasoning
- 1/2 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper (or to taste)
- 2 1/2 cups low sodium chicken broth
- 2 1/2 cups low sodium vegetable broth
- 2 bay leaves
- 1/2 teaspoon sea salt
Method
- Soak the dried beans overnight in a large bowl covered with water. For a quicker method, rinse the beans, place them in a pot, cover with cold water by 2 inches, bring to a boil for 5 minutes, then let them sit for 1 hour before draining.
- Transfer the drained beans to your slow cooker. Add all other ingredients except the salt and green onions. Set the cooker to High and cook for 7 hours.
- About 1 hour before the cooking time finishes, use a wooden spoon or potato masher to press roughly half of the bean mixture against the cooker's sides to thicken the sauce. Stir in the salt, then continue cooking for the final hour. If the sauce is still too thin after 7 hours, cook for an additional hour with the lid off.
- Approximately 30 minutes before the beans are ready, begin preparing your rice.
- To serve, place a portion of cooked rice in the centre of each bowl. Ladle the bean mixture around the rice and finish with a sprinkle of chopped green onions. A dash of hot sauce can be added if liked.
