Toffee & Sesame Bananas

Ingredients

  • 6 large bananas peeled and quartered
  • 8 tbsp light muscovado sugar
  • 2 tbsp butter
  • 200ml double cream
  • 2 tbsp sesame seeds toasted
  • good-quality vanilla ice cream, to serve

Method

  1. Coat the banana quarters in 2 tbsp of the muscovado sugar. Heat a griddle and cook the bananas in batches until they become sticky and develop characteristic marks. Transfer to a low oven to keep warm.
  2. To make the caramel sauce, place the rest of the sugar, the butter and the double cream into a saucepan. Heat gently while stirring until the sugar dissolves completely. Mix in the toasted sesame seeds. This sauce can be prepared a day in advance. For serving, arrange several banana pieces in each of 8 dishes, pour over some warm caramel, and finish with a scoop of ice cream.
