Apple Dumpling Puddle Pudding
This comforting dessert features soft, spiced dumplings baked atop a pool of salted caramel apples. The apples are first simmered in a buttery syrup to create a rich, saucy base. Light, fluffy dumplings are then arranged over the fruit and baked until golden. It's a wonderfully cosy pudding, ideal for serving warm with a generous dollop of cold cream. The recipe serves six and takes about 65 minutes to prepare and bake.
Ingredients
- 75g butter
- 250g light brown soft sugar
- 3 tbsp golden syrup
- 6 dessert apples (about 750g), peeled, cored and sliced
- double or clotted cream to serve
- 200g self-raising flour
- 1 tsp baking powder
- 2 tbsp caster sugar
- pinch ground cinnamon
- 100g cold butter cubed
- 6 tbsp milk
Method
- Set your oven to 180C/160C fan/gas 4. In a saucepan, combine the butter, sugar, golden syrup and 100ml water, then melt them together. Let the mixture come to a simmer, stir in the sliced apples and cook for 10-15 mins until they begin to soften, resulting in a saucy consistency. Season with a generous pinch of salt, taste and adjust if needed. Transfer the apple mixture to an ovenproof baking dish, roughly 20 x 30cm, or use two smaller dishes if your pan isn't suitable for the oven.
- Place the flour in a mixing bowl. Add the baking powder, caster sugar, cinnamon and a pinch of salt, mixing to combine. Use your fingertips to rub the cubed butter into the dry ingredients until the texture is like damp sand. Pour in the milk and stir with a knife until clumps form, then gently use your hands to bring the dough together, incorporating any dry bits. Avoid overworking the dough. Split the mixture into 12 pieces, each the size of a golf ball, and roll them into dumplings. Space the dumplings over the apples, leaving small gaps between them. Scatter a little extra sugar over the top and bake for 25 mins until the dumplings are puffed and golden. Allow to sit for a few minutes before serving with cold cream.
