Green Tea Frozen Yogurt with Sesame Brittle Shards
This Chinese dessert features a creamy frozen yogurt infused with matcha green tea powder, served with crunchy homemade sesame brittle. The recipe is straightforward, requiring you to chill the yogurt mixture for 1 hr before churning in an ice cream machine and freezing for 4-5 hrs. The accompanying brittle, made by caramelising sugar and sesame seeds, can be prepared up to 1 week ahead. Allow the frozen yogurt to soften for about 1 hr before serving. It yields 8 portions.
Ingredients
- 2 x 500g pots 2% Greek yoghurt
- 200g caster sugar
- 2 tbsp green tea matcha powder
- 200g caster sugar
- 4 tbsp toasted sesame seed
Method
- Whisk the yoghurt, sugar and matcha powder thoroughly in a large bowl until the sugar dissolves. Cover the bowl and place it in the refrigerator for 1 hr to chill completely. Churn the cold mixture in your ice-cream machine as directed. Transfer to a suitable container and freeze for 4-5 hrs until solid.
- Prepare a baking sheet with baking parchment for the brittle. Melt the 200g caster sugar in a medium saucepan, leaving it undisturbed for about 5 mins until it bubbles and turns golden. Mix in the toasted sesame seeds, let it boil for a few secs, then pour onto the sheet, spreading it thinly. Once set hard, crack the sheet of brittle by hitting it on your work surface. This can be made 1 week ahead and kept in an airtight tin.
- Take the frozen yogurt from the freezer approximately 1 hr prior to serving to allow it to soften. Serve scoops in small bowls, sprinkling the broken sesame brittle over the top.
