Thick Yogurt and Herb Dip
This creamy, tangy dip is inspired by Middle Eastern labneh. Thick Greek yogurt is drained to achieve a rich texture, then combined with fresh spring onions, dill and mint. Finished with a drizzle of olive oil, it's an ideal buffet or canape dish, serving eight alongside other food. The preparation takes about 65 minutes, with most of that time being hands-off chilling.
Ingredients
- 400g Greek yogurt
- 4 spring onions finely sliced
- 1 tbsp each dill and mint, chopped
- extra-virgin olive oil for drizzling
Method
- 1. Place the yogurt into a fine sieve positioned over a bowl. Allow it to drain in the refrigerator for 1 hr. 2. Dispose of any liquid collected in the bowl. Transfer the thickened yogurt to a mixing bowl. 3. Mix in the sliced spring onions and the majority of the chopped herbs. 4. To serve, finish with a drizzle of extra virgin olive oil and a scattering of the reserved herbs and some black pepper.
