Spinach and Feta Falafel Bites

Ingredients

  • 200g baby spinach
  • 400g can drained chickpeas
  • 100g feta cheese
  • 2 tsp cumin
  • 100g plain flour
  • vegetable oil for frying
  • tzatziki to serve

Method

  1. Place the baby spinach in a colander and pour boiling water from a kettle over it. Once it has cooled, thoroughly squeeze out all the excess moisture. In a food processor, pulse the spinach with the drained chickpeas, feta cheese, cumin, and plain flour until the mixture just comes together. Using floured hands, form the mixture into balls about a tablespoon in size, then press them into patties.
  2. Cook the patties in batches in vegetable oil for 2-3 mins on each side. Allow them to cool completely. Arrange the cooled falafel bites on a baking tray, cover with cling film, and place in the freezer. For serving, defrost them overnight in the refrigerator. Bake at 180C/160C fan/ gas 4 for 5-10 mins. Accompany with tzatziki.
