Spinach and Feta Falafel Bites
These Middle Eastern style canapés are perfect for a buffet. The mixture of spinach, chickpeas, and feta is shaped into patties, fried, and then frozen for convenience. Simply defrost and bake when needed for a quick party food. They are served with a cool tzatziki dip. This recipe yields 30 bites and takes about 55 minutes to prepare and cook.
Ingredients
- 200g baby spinach
- 400g can drained chickpeas
- 100g feta cheese
- 2 tsp cumin
- 100g plain flour
- vegetable oil for frying
- tzatziki to serve
Method
- Place the baby spinach in a colander and pour boiling water from a kettle over it. Once it has cooled, thoroughly squeeze out all the excess moisture. In a food processor, pulse the spinach with the drained chickpeas, feta cheese, cumin, and plain flour until the mixture just comes together. Using floured hands, form the mixture into balls about a tablespoon in size, then press them into patties.
- Cook the patties in batches in vegetable oil for 2-3 mins on each side. Allow them to cool completely. Arrange the cooled falafel bites on a baking tray, cover with cling film, and place in the freezer. For serving, defrost them overnight in the refrigerator. Bake at 180C/160C fan/ gas 4 for 5-10 mins. Accompany with tzatziki.
