This colourful buffet salad brings together giant couscous with sweet orange segments, salty feta cheese and a spiced harissa dressing. Flavoured with cinnamon, coriander and fresh herbs, it's a substantial and flavourful dish that can be prepared ahead. It serves 8 people and is ready in about 35 minutes, making it ideal for a party spread.

Orange and Feta Giant Couscous Salad

Ingredients

  • 300g pack giant couscous (available from Merchant Gourmet)
  • 5 oranges 3 zested
  • zest and juice 1 lemon
  • 3 tbsp olive oil
  • 3 tbsp harissa
  • 2 tsp ground cinnamon
  • 2 tsp ground coriander
  • 2 small red onions halved and thinly sliced
  • 2 x 200g packs feta cheese crumbled into chunky pieces
  • small bunch mint leaves picked and chopped
  • small bunch coriander chopped
  • 100g bag baby spinach

Method

  1. Boil a large pan of salted water. Cook the couscous according to the pack instructions. While it cooks, use a small knife to peel the oranges, then segment them over a large bowl to catch any juice. Reserve the orange segments.
  2. Drain the cooked couscous and transfer it to the bowl with the orange juice. Mix in the orange zest, lemon zest and juice, 3 tbsp olive oil, 3 tbsp harissa, 2 tsp ground cinnamon, 2 tsp ground coriander, and seasoning. Allow it to cool, stirring occasionally. You can chill it for up to 24 hrs at this stage.
  3. Once the couscous mixture is cool, add the sliced red onions, crumbled feta, mint, coriander, baby spinach and the reserved orange segments. Toss everything together gently to avoid crushing the oranges. Serve the salad at room temperature. Leftovers will keep in the fridge for up to 2 days.
