This satisfying Tex-Mex recipe features seasoned ground beef combined with beans, tomatoes and melted cheese. It cooks in one pan for a simple meal. Serve it as a main dish accompanied by a fresh salad, or present it in a chafing dish with tortilla chips for dipping as a crowd-pleasing appetiser. The creamy, spiced mixture is ready in about 40 minutes.

Ingredients

  • 2 lbs lean ground beef
  • 1 large onion, chopped
  • 2 (10 ounce) cans tomatoes and green chilies
  • 1 (1 ounce) package chili seasoning mix
  • 2 (15 ounce) cans ranch style beans
  • 1 lb Velveeta cheese, cubed
  • 1 cup light cream or 1 cup half-and-half
  • tortilla chips, to taste

Method

  1. Cook the ground beef in a large skillet until browned, then drain off the fat.
  2. Stir in the chopped onion and cook for a short time.
  3. Mix in the tomatoes with green chillies, the packet of chilli seasoning and the beans, then let it simmer for 15 minutes.
  4. Add the cubed cheese and the cream, continuing to simmer for 5 minutes or until the cheese has fully melted.
  5. For serving, arrange tortilla chips on plates and spoon the hot beef mixture over them.
