Texas Stuff
This satisfying Tex-Mex recipe features seasoned ground beef combined with beans, tomatoes and melted cheese. It cooks in one pan for a simple meal. Serve it as a main dish accompanied by a fresh salad, or present it in a chafing dish with tortilla chips for dipping as a crowd-pleasing appetiser. The creamy, spiced mixture is ready in about 40 minutes.
Ingredients
- 2 lbs lean ground beef
- 1 large onion, chopped
- 2 (10 ounce) cans tomatoes and green chilies
- 1 (1 ounce) package chili seasoning mix
- 2 (15 ounce) cans ranch style beans
- 1 lb Velveeta cheese, cubed
- 1 cup light cream or 1 cup half-and-half
- tortilla chips, to taste
Method
- Cook the ground beef in a large skillet until browned, then drain off the fat.
- Stir in the chopped onion and cook for a short time.
- Mix in the tomatoes with green chillies, the packet of chilli seasoning and the beans, then let it simmer for 15 minutes.
- Add the cubed cheese and the cream, continuing to simmer for 5 minutes or until the cheese has fully melted.
- For serving, arrange tortilla chips on plates and spoon the hot beef mixture over them.
