Fabulous Nachos
This is a personal recipe created for a Tex-Mex craving, ideal for gatherings like game day. It yields a substantial portion to satisfy many guests. The dish features layered tortilla chips with a spiced beef and bean mixture, multiple cheeses, and zesty toppings, all baked until perfectly melted and served warm.
Ingredients
- 1 (16 ounce) bag authentic tortilla chips (El Milagro are good)
- 1/4 lb ground beef, cooked, crumbled and drained
- 1 (16 ounce) can refried beans
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 teaspoon chili powder, to taste
- 1 teaspoon dried onion flakes
- 1 (8 ounce) jar cheese sauce
- 1 (15 ounce) can Rotel Tomatoes
- 2 cups shredded cheddar cheese
- pickled jalapeno pepper
- shredded lettuce
- salsa verde
- sour cream
Method
- Combine the cooked and crumbled ground beef with the refried beans, ground cumin, chili powder, salt and dried onion flakes.
- Warm this mixture thoroughly.
- Arrange half the bag of tortilla chips on a large platter suitable for the oven.
- Spread half of the warm beef and bean blend over the chips.
- Drizzle half of the cheese sauce over the beef, followed by half the can of Rotel tomatoes and salsa verde according to your preference.
- Create another layer using the remaining chips, the rest of the beef mixture, the other half of the Rotel, more salsa verde and the remaining cheese sauce.
- Scatter the shredded cheddar cheese and pickled jalapeno peppers over the top.
- Bake at 350°F for approximately 20 minutes or until the cheese has fully melted.
- Finish by adding shredded lettuce and dollops of sour cream as a garnish.
- Serve the nachos while they are still warm.
