Tequila Pork Chops

Ingredients

  • 4 center-cut pork loin chops (each about 3/4 inch thick)
  • 1/2 teaspoon cumin seed
  • 1/4 cup butter
  • 3 cloves garlic, peeled and minced
  • 1/4 cup chicken broth
  • 1/2 cup tequila
  • 2 tablespoons lime juice
  • 2 -4 teaspoons minced fresh jalapeno chiles
  • salt and pepper

Method

  1. Remove any excess fat from the pork chops.
  2. Dampen the chops with a towel, then press the cumin seeds evenly onto both sides.
  3. Heat a large nonstick frying pan, between 10 and 12 inches in size.
  4. Once the pan is hot, add 1 teaspoon of butter and swirl it to coat the base.
  5. Add the chops to the pan, turning them to brown each side well. this should take about 6 minutes in total.
  6. Mix the minced garlic into the pan.
  7. Take the pan off the heat, ensuring it is away from any open flame or fan.
  8. Pour the chicken broth, tequila, and lime juice into the pan and stir.
  9. Return the pan to the heat and bring the liquid to a boil. Lower the heat and let it simmer until the pork is cooked through, which takes about 4 minutes.
  10. Move the cooked chops to a serving platter and keep them warm.
  11. Increase the heat and boil the pan juices until they reduce to between 3 and 4 tablespoons, for about 2 minutes.
  12. Add the rest of the butter in one piece and stir until it melts into the sauce.
  13. Stir the minced jalapeño chiles into the sauce to your preferred taste.
  14. Spoon the finished sauce over the plated pork chops.
  15. Finally, season the dish with salt and pepper as desired.
