Tequila Pork Chops
These pan-browned pork loin chops are coated in cumin seeds and cooked until golden. They are then simmered in a bold sauce made with tequila, lime juice, chicken broth, and garlic. The sauce is reduced and finished with butter and fresh jalapeños for a rich, zesty finish. This hearty dish comes together in just half an hour.
Ingredients
- 4 center-cut pork loin chops (each about 3/4 inch thick)
- 1/2 teaspoon cumin seed
- 1/4 cup butter
- 3 cloves garlic, peeled and minced
- 1/4 cup chicken broth
- 1/2 cup tequila
- 2 tablespoons lime juice
- 2 -4 teaspoons minced fresh jalapeno chiles
- salt and pepper
Method
- Remove any excess fat from the pork chops.
- Dampen the chops with a towel, then press the cumin seeds evenly onto both sides.
- Heat a large nonstick frying pan, between 10 and 12 inches in size.
- Once the pan is hot, add 1 teaspoon of butter and swirl it to coat the base.
- Add the chops to the pan, turning them to brown each side well. this should take about 6 minutes in total.
- Mix the minced garlic into the pan.
- Take the pan off the heat, ensuring it is away from any open flame or fan.
- Pour the chicken broth, tequila, and lime juice into the pan and stir.
- Return the pan to the heat and bring the liquid to a boil. Lower the heat and let it simmer until the pork is cooked through, which takes about 4 minutes.
- Move the cooked chops to a serving platter and keep them warm.
- Increase the heat and boil the pan juices until they reduce to between 3 and 4 tablespoons, for about 2 minutes.
- Add the rest of the butter in one piece and stir until it melts into the sauce.
- Stir the minced jalapeño chiles into the sauce to your preferred taste.
- Spoon the finished sauce over the plated pork chops.
- Finally, season the dish with salt and pepper as desired.
