Green Papaya Salad

This Vietnamese salad, known as 'goui', features shredded green papaya as its base. It is topped with cooked pork loin and shrimp, then tossed in a zesty fish sauce dressing. Green Papaya Salad

Ingredients

  • 1 (2 lb) medium papayas, remove the skin,split,seeded and cut in very thinly julienne strips
  • 1/2 lb pork loin (boneless)
  • 1/2 lb of shelled and deveined shrimp
  • 3 teaspoons of chopped coriander
  • 3 tablespoons chopped fresh Asian basil or 3 tablespoons mint
  • 1/2 cup of chopped roasted peanuts
  • 1 clove garlic, crushed or minced
  • 1 fresh limes, juice of or 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 2 tablespoons fish sauce
  • 4 tablespoons water
  • 1 hot red chili pepper, minced (optional)

  • 1 hot red chili pepper, finely julienned (optional)
  • fish sauce, dip

Method

  1. Rinse the shrimp in cold water that has been salted.
  2. Allow the shrimp to drain and then set them aside.
  3. Bring water to a boil in a medium saucepan.
  4. Once boiling, add the pork loin to the pan and simmer it for at least 30 minutes until fully cooked.
  5. Remove the pork, drain it, and set it aside to cool.
  6. Once cool, cut the pork into long, thin strips about 2 inches in length.
  7. Boil water in a separate saucepan.
  8. When the water boils, add the shrimp and cook them for 5 minutes.
  9. Drain the cooked shrimp, slice them in half lengthwise, and set aside.
  10. Place the julienned green papaya in a large bowl of cold water with 1 teaspoon of salt and let it soak.
  11. Leave the papaya to soak for 10 minutes, then rinse it thoroughly and drain well.
  12. Wrap the shredded papaya in cheesecloth and squeeze out any remaining water.
  13. Combine the papaya with the pork and most of the shrimp in a bowl, add the fish sauce dip, and toss everything together.
  14. Prepare the fish sauce dip by mixing all its listed ingredients together until well combined.
  15. For serving, place the salad on a plate and arrange the reserved shrimp on top, then sprinkle with coriander, basil or mint, and chopped peanuts.
  16. Provide shrimp crackers for guests to use as scoops for eating the salad.
  17. An alternative serving suggestion is to use finely shredded beef jerky in place of the pork and shrimp.
