Cameroon Style Papaya Jam
This recipe guides you through making a classic Cameroonian preserve. Ripe papaya is combined with sugar and lemon juice, then cooked down into a thick, sweet jam. The process involves macerating the fruit overnight before simmering it to the perfect consistency. Ingredients
- 1 large ripe papaya
- 1 lemon, juice of
- 900 g sugar
Method
- Remove the skin and seeds from the papaya, then cut it into thin slices. Place in a bowl and mix with the sugar and lemon juice. Cover the bowl and refrigerate the mixture overnight.
- The next day, use a food processor to purée the mixture or pound it into a paste using a mortar. Pour it into a saucepan, bring it to a boil, then let it simmer. Cook until the liquid has completely reduced, then ladle the hot jam into sterilised jars and secure the lids.
- Let the jars cool completely. Place any jars that did not seal properly in the refrigerator. Keep sealed jars in a cool, dark place for storage.
