Spinach Cheese Manicotti (Meatless)
This meatless manicotti features a rich filling of ricotta, mozzarella, and cream cheese combined with spinach and Italian herbs. The pasta tubes are filled, nestled in a layer of spaghetti sauce, and baked until bubbly. A final topping of melted cheese finishes the dish. The recipe includes a hint of nutmeg and cinnamon for added depth of flavour. It serves four people and takes about 85 minutes to prepare and cook.
Ingredients
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon vegetable oil (canola or olive)
- 1 1/2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded,divided (4 ounces)
- 4 ounces cream cheese, softened
- 6 tablespoons parmesan cheese, grated,divided
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon black pepper
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 8 manicotti, cooked and drained acording to package directions
- 1 (26 ounce) jar spaghetti sauce
- 1/8-1/4 teaspoon ground nutmeg
- 1/8-1/4 teaspoon ground cinnamon
Method
- Cook the finely chopped onion and minced garlic in vegetable oil in a small skillet for about 3 minutes, then set this mixture aside.
- Mix the ricotta cheese, 1/2 cup of the shredded mozzarella, the softened cream cheese, 4 tablespoons of the grated Parmesan, the dried Italian seasoning, and black pepper together in a bowl until you have a smooth blend.
- Stir the cooked onion and garlic mixture into the cheese blend, followed by the thawed and squeezed-dry spinach, a dash of ground nutmeg, and a dash of ground cinnamon.
- Use a spoon or a piping bag to fill each of the cooked and drained manicotti noodles with the cheese and spinach mixture.
- Spread half of the jar of spaghetti sauce over the base of a greased 9x13 inch casserole dish.
- Arrange the filled manicotti in a single layer on top of the sauce, then pour the rest of the spaghetti sauce over them.
- Cover the dish and bake at 350 F for 25 minutes.
- Take the dish out, remove the cover, and sprinkle the remaining mozzarella and Parmesan cheese over the top before returning it to the oven for another 5-10 minutes to melt the cheese.
