Spinach Cheese Manicotti (Meatless)

Ingredients

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil (canola or olive)
  • 1 1/2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded,divided (4 ounces)
  • 4 ounces cream cheese, softened
  • 6 tablespoons parmesan cheese, grated,divided
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 8 manicotti, cooked and drained acording to package directions
  • 1 (26 ounce) jar spaghetti sauce
  • 1/8-1/4 teaspoon ground nutmeg
  • 1/8-1/4 teaspoon ground cinnamon

Method

  1. Cook the finely chopped onion and minced garlic in vegetable oil in a small skillet for about 3 minutes, then set this mixture aside.
  2. Mix the ricotta cheese, 1/2 cup of the shredded mozzarella, the softened cream cheese, 4 tablespoons of the grated Parmesan, the dried Italian seasoning, and black pepper together in a bowl until you have a smooth blend.
  3. Stir the cooked onion and garlic mixture into the cheese blend, followed by the thawed and squeezed-dry spinach, a dash of ground nutmeg, and a dash of ground cinnamon.
  4. Use a spoon or a piping bag to fill each of the cooked and drained manicotti noodles with the cheese and spinach mixture.
  5. Spread half of the jar of spaghetti sauce over the base of a greased 9x13 inch casserole dish.
  6. Arrange the filled manicotti in a single layer on top of the sauce, then pour the rest of the spaghetti sauce over them.
  7. Cover the dish and bake at 350 F for 25 minutes.
  8. Take the dish out, remove the cover, and sprinkle the remaining mozzarella and Parmesan cheese over the top before returning it to the oven for another 5-10 minutes to melt the cheese.
