Easy Manicotti
This simplified manicotti recipe skips the step of boiling the pasta tubes. A seasoned ricotta, mozzarella and Parmesan filling is stuffed into uncooked manicotti, then covered with marinara sauce and baked until tender. The final touch is a sprinkle of extra cheese baked until melted. It yields a satisfying meal for four people in about 65 minutes.
Ingredients
- 1 lb ricotta cheese
- 4 ounces mozzarella cheese, grated
- 3 tablespoons parmesan cheese, grated
- 1 teaspoon sugar
- 1 egg, slightly beaten
- nutmeg (to taste)
- 1 tablespoon parsley, finely chopped
- salt and pepper
- 1 (5 ounce) package manicotti, uncooked
- 1 (15 1/2 ounce) jar prepared meatless marinara sauce (or homemade, if desired)
Method
- Mix together the ricotta, grated mozzarella, grated Parmesan, sugar, egg, nutmeg, chopped parsley, salt and pepper.
- Generously fill the uncooked manicotti tubes with the cheese mixture from both ends.
- Place the stuffed manicotti in one layer inside a baking dish.
- Heat the marinara sauce until boiling, then pour it over the manicotti to cover them fully.
- Seal the baking dish tightly by covering it with aluminium foil, crimping the edges.
- Bake in an oven preheated to 400 degrees Fahrenheit for 40 minutes.
- Take off the foil and sprinkle a generous amount of extra grated cheese over the top.
- Return to the oven and bake without the foil for 5 minutes more.
