Meaty Stuffed Manicotti
This classic manicotti dish is packed with a rich filling of Italian sausage and ground beef, combined with mozzarella, cottage cheese, and Italian herbs. The stuffed pasta tubes are baked in a mushroom pasta sauce and finished with a sprinkle of Parmesan. It's a comforting and substantial meal that serves eight.
Ingredients
- 1 (8 ounce) package manicotti
- 1/2 lb hot Italian sausage or 1/2 lb mild Italian sausage (3 links)
- 1/2 lb ground round
- 1 large egg
- 1/3 cup milk
- 1 slice white bread, cubed
- 1 cup shredded mozzarella cheese
- 1 (8 ounce) container small curd cottage cheese
- 1 tablespoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1 (16 ounce) jar pasta sauce with mushrooms, divided
- 1/4 cup parmesan cheese
Method
- Follow the package directions to cook the manicotti, then rinse it under cold water.
- Drain the cooked pasta thoroughly.
- Take the sausage out of its casings and discard the casings.
- In a large skillet, cook the sausage and ground beef, breaking it up until it crumbles and loses its pink colour.
- Drain the fat from the cooked meat.
- In a large mixing bowl, combine the egg and milk, then mix in the cubed bread.
- Add the drained meat, mozzarella cheese, cottage cheese, Italian seasoning, salt, garlic powder, and pepper to the bowl and stir together.
- Fill the manicotti shells with the meat and cheese mixture and place them in a greased 13x9-inch baking dish.
- Pour half of the jar of mushroom pasta sauce over the arranged shells.
- Cover the dish and bake at 350 degrees for 30 minutes.
- Remove the cover, pour the rest of the sauce over the manicotti, and sprinkle with the Parmesan cheese.
- Return the dish to the oven, uncovered, and bake for another 10 minutes.
