Spicy Chipotle Marinade
This robust Tex-Mex marinade combines olive oil, garlic, fresh lemon juice, and smoky chipotle pepper sauce with cumin and salt. It is prepared in a saucepan and then cooled. A portion is reserved for serving, while the rest is used to flavour meats or seafood destined for the grill. The used marinade is discarded after use. It yields about 1 1/2 cups and takes roughly 10 minutes to prepare.
Ingredients
- 1/2 cup olive oil
- 1/4 cup garlic, minced
- 1/2 cup fresh lemon juice
- 1/4 cup TABASCO® brand Chipotle Pepper Sauce
- 1 teaspoon salt
- 1 teaspoon ground cumin
Method
- Warm the olive oil in a small saucepan.
- Add the minced garlic and cook it for 15 seconds until aromatic.
- Take the pan off the heat and allow it to cool slightly.
- Mix in the lemon juice, chipotle pepper sauce, salt, and ground cumin, then bring the mixture to a boil.
- Remove the saucepan from the heat again and let the marinade cool completely.
- Reserve 1/2 cup of the marinade to be used as a table sauce.
- Employ the remaining marinade to coat poultry, meat, or seafood prior to grilling.
- Throw away any marinade that has been in contact with raw food.
