Spicy Chipotle Marinade

This robust Tex-Mex marinade combines olive oil, garlic, fresh lemon juice, and smoky chipotle pepper sauce with cumin and salt. It is prepared in a saucepan and then cooled. A portion is reserved for serving, while the rest is used to flavour meats or seafood destined for the grill. The used marinade is discarded after use. It yields about 1 1/2 cups and takes roughly 10 minutes to prepare.

Spicy Chipotle Marinade

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup garlic, minced
  • 1/2 cup fresh lemon juice
  • 1/4 cup TABASCO® brand Chipotle Pepper Sauce
  • 1 teaspoon salt
  • 1 teaspoon ground cumin

Method

  1. Warm the olive oil in a small saucepan.
  2. Add the minced garlic and cook it for 15 seconds until aromatic.
  3. Take the pan off the heat and allow it to cool slightly.
  4. Mix in the lemon juice, chipotle pepper sauce, salt, and ground cumin, then bring the mixture to a boil.
  5. Remove the saucepan from the heat again and let the marinade cool completely.
  6. Reserve 1/2 cup of the marinade to be used as a table sauce.
  7. Employ the remaining marinade to coat poultry, meat, or seafood prior to grilling.
  8. Throw away any marinade that has been in contact with raw food.
