Spicy Chick-Peas and Rice
This dish combines cooked brown rice with chickpeas and a blend of herbs and spices for a satisfying meal. The 'spicy' in the name refers to the depth of flavour from seasonings like cumin, turmeric, basil and marjoram, not heat. It's a quick recipe that comes together in one skillet. You can use pre-cooked rice, and white rice is a suitable alternative if you prefer.
Ingredients
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 2 cups long grain brown rice, cooked
- 1 (16 ounce) can chickpeas, drained
- 1/2 cup water
- 2 tablespoons parsley, chopped (fresh)
- 1/2 teaspoon salt
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon fresh ground pepper
Method
- Cook the chopped onion and minced garlic in olive oil within a large skillet, stirring often, until they become tender.
- Add the cooked rice along with all the other ingredients to the skillet. Place a lid on the skillet, lower the heat, and let it cook for 15 to 20 minutes, giving it an occasional stir.
