Stuffed Zucchini

This light summer dish features hollowed zucchini halves stuffed with a savoury mixture of Italian turkey sausage, diced vegetables, and mozzarella cheese. The filling is seasoned with garlic powder and Italian seasoning, then the stuffed squash is baked with a little water to steam. You can prepare the squash in advance for an easy evening meal. Stuffed Zucchini

Ingredients

  • 2 medium zucchini
  • 2 links Italian turkey sausage
  • 1 teaspoon garlic powder
  • 1/2 teaspoon italian seasoning
  • 1/8 teaspoon black pepper
  • 2 tablespoons breadcrumbs
  • 1/2 cup part-skim mozzarella cheese
  • 1/4 cup marinara sauce
  • 1/8 small red pepper, diced
  • 1/3 stalk celery, diced
  • 1 teaspoon olive oil
  • 1/4 cup water

Method

  1. Slice each zucchini in half lengthways and trim the stem end.
  2. Use a spoon or melon baller to hollow out the centres of each zucchini half.
  3. Keep a 1/4-inch border on all sides and the bottom, then chop the scooped flesh from three of the halves into small pieces.
  4. Take the turkey sausage out of its casing.
  5. Heat the olive oil in a small saucepan and cook the turkey sausage until browned, crumbling it as it cooks.
  6. Put the diced red pepper, celery, and chopped squash into the pan and cook until softened.
  7. Drain the mixture and transfer it to a mixing bowl.
  8. Combine the cooked sausage, garlic powder, Italian seasoning, black pepper, breadcrumbs, cheese, and marinara sauce with the vegetables.
  9. Spoon the prepared stuffing into the hollowed zucchini boats and arrange them in a baking dish.
  10. Pour 1/4 cup of water into the base of the dish and cover it tightly with foil.
  11. Bake for 35 minutes.
