Spicy Black Bean Meatballs

Ingredients

  • 1/2 cup red onion, small dice
  • 2 tablespoons jalapenos, minced
  • 1/3 cup breadcrumbs, unseasoned
  • 2 teaspoons salt
  • 1 teaspoon chili powder
  • 1 dash pepper
  • 1 egg
  • 1 (15 1/2 ounce) can black beans

Method

  1. Set your oven to heat to 350 degrees.
  2. Take a mixing bowl and stir together the diced red onion, minced jalapeno, unseasoned breadcrumbs, 2 teaspoons salt, 1 teaspoon chili powder, and a dash of pepper. Leave this aside.
  3. Drain the can of black beans and rinse them well under running water using a colander.
  4. Put the rinsed black beans and the egg into a food processor and blend until you have a smooth puree. Transfer this puree into the bowl with the other ingredients.
  5. Mix everything together thoroughly. The resulting mixture should hold together without being sticky and be simple to shape.
  6. Shape the mixture into 12 balls, each about 1 1/2 inches in size. Arrange them on a nonstick baking sheet or one sprayed with non-stick spray. Place the sheet in the preheated oven.
  7. Bake the balls for 20-25 minutes until they are firm and have a light brown colour. Then they are ready to serve.
