Spicy Meatball Skillet
This one-skillet dish combines spicy Italian sausage meatballs with broken linguine, cooked directly in a mix of chicken broth and marinara sauce. It's a fast, flavourful meal that comes together in about 15 minutes. Finish it with a drizzle of olive oil, fresh basil, and grated parmesan cheese. For a cheesy finish, you can add mozzarella and briefly broil it until golden and bubbly.
Ingredients
- 1 lb hot Italian sausage, loose, removed from casings
- 2 tablespoons olive oil, plus additional for serving
- 12 ounces linguine, broken in half
- 2 cups low sodium chicken broth
- 1 1/4 cups marinara sauce
- fresh basil, for serving
- freshly grated parmesan cheese, for serving
- 1/2 lb mozzarella cheese, thinly sliced (optional)
Method
- Shape the sausage into sixteen meatballs, each about 1 ½ inches in size.
- Place a large skillet on the heat and add 2 tablespoons of olive oil, swirling it around the pan. Once the oil is smoking, add the meatballs. Sear them for about 2 minutes per side, turning only when they release easily from the skillet.
- Introduce the broken linguine, chicken broth, and marinara sauce to the skillet. Bring the mixture to a boil and cook for 7-8 minutes, stirring often, until the pasta is al dente. Drizzle with a little olive oil and serve straight away, topped with basil and parmesan. For an optional cheesy topping, add slices of mozzarella and place under a broiler for 3-4 minutes until the cheese is bubbling and has golden spots.
