Taco Meatball Bites
These Mexican-inspired meatball bites offer a tasty blend of seasoned beef baked until tender. Each meatball is nestled in a corn chip scoop and finished with a drizzle of homemade cheese sauce, fresh guacamole, and pico de gallo. They are perfect for sharing and can be ready in about 30 minutes, making them an ideal choice for a quick appetiser or party snack.
Ingredients
- 1 lb ground beef (80/20)
- 2 tablespoons taco seasoning
- 1 tablespoon tomato paste
- 2 tablespoons canned chopped chilies
- 1 large egg, lightly beaten
- 1/3 cup plain breadcrumbs
- 2 tablespoons chopped cilantro
- 24 -30 corn, chip scoops
- cheese, dip (Queso, see recipe below)
- 1 cup guacamole
- 1 cup small dice pico de gallo
- 2 tablespoons finely chopped cilantro
- 1 cup sour cream
- 1 1/2 cups grated cheddar cheese
- 1 1/2 cups grated monterey jack pepper cheese
- 1 tablespoon cornstarch
- 1 cup milk
- 1 tablespoon canned chopped chile
Method
- Set your oven to 400 degrees F. Prepare a baking sheet by lining it with parchment paper.
- Mix the ground beef, taco seasoning, tomato paste, 2 tablespoons of chopped chilis, the egg, breadcrumbs, and chopped cilantro in a large bowl. Shape the mixture into 2-inch meatballs and arrange them on the baking sheet.
- Bake the meatballs for 15-20 minutes until they are fully cooked. Take them out and place each one into a corn chip scoop. Finish by drizzling with queso and adding toppings of guacamole, pico de gallo, and chopped cilantro. Serve accompanied by sour cream.
- To prepare the Queso.
- Combine the cheddar cheese, pepper jack cheese, and cornstarch in a large bowl by tossing them together. Heat the milk in a medium saucepan until it simmers. Whisk the cheese mixture and the chopped chilis into the milk. Let it return to a simmer for about 1-2 minutes to thicken.
