These Mexican-inspired meatball bites offer a tasty blend of seasoned beef baked until tender. Each meatball is nestled in a corn chip scoop and finished with a drizzle of homemade cheese sauce, fresh guacamole, and pico de gallo. Taco Meatball Bites

Ingredients

  • 1 lb ground beef (80/20)
  • 2 tablespoons taco seasoning
  • 1 tablespoon tomato paste
  • 2 tablespoons canned chopped chilies
  • 1 large egg, lightly beaten
  • 1/3 cup plain breadcrumbs
  • 2 tablespoons chopped cilantro
  • 24 -30 corn, chip scoops
  • cheese, dip (Queso, see recipe below)
  • 1 cup guacamole
  • 1 cup small dice pico de gallo
  • 2 tablespoons finely chopped cilantro
  • 1 cup sour cream
  • 1 1/2 cups grated cheddar cheese
  • 1 1/2 cups grated monterey jack pepper cheese
  • 1 tablespoon cornstarch
  • 1 cup milk
  • 1 tablespoon canned chopped chile

Method

  1. Set your oven to 400 degrees F. Prepare a baking sheet by lining it with parchment paper.
  2. Mix the ground beef, taco seasoning, tomato paste, 2 tablespoons of chopped chilis, the egg, breadcrumbs, and chopped cilantro in a large bowl. Shape the mixture into 2-inch meatballs and arrange them on the baking sheet.
  3. Bake the meatballs for 15-20 minutes until they are fully cooked. Take them out and place each one into a corn chip scoop. Finish by drizzling with queso and adding toppings of guacamole, pico de gallo, and chopped cilantro. Serve accompanied by sour cream.
  4. To prepare the Queso.
  5. Combine the cheddar cheese, pepper jack cheese, and cornstarch in a large bowl by tossing them together. Heat the milk in a medium saucepan until it simmers. Whisk the cheese mixture and the chopped chilis into the milk. Let it return to a simmer for about 1-2 minutes to thicken.
