Spicy Aubergine Dip with Carrot Dippers
This quick and healthy snack features a flavourful dip made from aubergine, harissa, and cumin, blended with coriander and yogurt. It is served with fresh carrot batons for dipping, offering a nutritious option that contributes two portions towards your daily fruit and vegetable intake. The entire dish is prepared in just 15 minutes.
Ingredients
- 1 tbsp harissa
- 1 tsp ground cumin
- 1 aubergine diced
- 2 tbsp finely chopped coriander
- 2 tbsp bio yogurt
- squeeze of lemon or lime juice
- 4 carrots (80g each), cut into quarters lengthways
Method
- Place the harissa, cumin, diced aubergine, and 2 tbsp water into a small non-stick pan.
- Cover the pan with a lid and cook the mixture for 10 mins until the aubergine becomes soft, stirring now and then to avoid sticking. Add a splash more water if needed.
- Stir in the coriander, yogurt, and a squeeze of lemon or lime juice.
- Use a hand blender to blitz the mixture directly in the pan until smooth.
- Divide the finished dip between four small pots or bowls.
- Serve each portion with a quartered carrot for dipping.
