This comforting plant-based stew combines chickpeas, broccoli and green beans in a fragrant sauce made with coconut yogurt, ginger and turmeric. It's a light, low-fat meal that is simple to prepare. The recipe makes enough for two servings, with leftovers that can be kept chilled and reheated. Serve it with brown basmati rice for a complete and satisfying dinner.

Chickpea, Coconut and Broccoli Stew

Ingredients

  • 300g brown basmati or easy-cook rice
  • 2 tsp rapeseed oil
  • 20g piece of ginger peeled and finely chopped
  • 3 garlic cloves chopped
  • 2 tsp ground turmeric
  • 1 tsp cumin seeds
  • 200ml vegetable stock made with 2 tsp bouillon powder
  • 2 x 400g cans chickpeas drained and liquid reserved
  • 1 red chilli deseeded and sliced
  • 320g broccoli cut into bite-sized florets
  • 200g green beans trimmed and halved
  • 150g coconut yogurt
  • 15g coriander chopped

Method

  1. Cook the rice according to the pack instructions, about 25 mins. While the rice cooks, warm the oil in a large frying pan and fry the ginger and garlic for a couple of minutes until aromatic. Add the turmeric and cumin seeds, stir briefly, then pour in the stock along with a quarter of the chickpeas and all the reserved liquid from the cans. Cover and cook for 5 mins, then blend until smooth with a hand blender.
  2. Mix in the sliced chilli, the rest of the chickpeas, the broccoli florets and the green beans. Cover the pan and cook over a low heat for 7-8 mins until the vegetables are just tender. Stir through the coconut yogurt and chopped coriander. Serve one portion immediately with half the rice. Allow the remaining stew to cool completely before chilling for another day. It will keep chilled for up to three days. Reheat it with the rice in microwave-safe bowls until piping hot.
