Spiced Glazed Pineapple with Cinnamon Fromage Frais
This Caribbean dessert offers a light and tropical conclusion to any meal. Fresh pineapple wedges are caramelised in a pan with honey and butter, then coated in a warm glaze of lime juice, cinnamon, and nutmeg. It is served immediately with a dollop of sweetened cinnamon fromage frais for a delightful contrast. The whole dish comes together with minimal effort for a satisfying sweet treat.
Ingredients
- zest and juice 1 lime
- 2 tbsp clear honey
- 2 pinches ground cinnamon
- few gratings whole nutmeg
- 2 tsp icing sugar sifted
- 200g very low-fat fromage frais
- 2 tsp butter
- 1 fresh pineapple cut into 8 long wedges, skin and core removed
Method
- Combine the lime juice and half the zest with 1 tbsp honey, a pinch of cinnamon and the nutmeg to create a sauce, then set it aside. Mix the icing sugar and a pinch of cinnamon into the fromage frais.
- Melt the butter and remaining honey in a non-stick frying pan. Cook the pineapple wedges for 8 mins, turning often until caramelised. Add the reserved spiced lime sauce and let it bubble for a few secs, tossing the fruit to coat.
- Plate the glazed pineapple straight away, scattering over the leftover lime zest. Serve with a spoonful of the cinnamon fromage frais on the side.
