Ingredients

  • 100g caster sugar
  • 1 tsp vanilla paste
  • juice 1 lime
  • 1 pineapple skinned and very thinly sliced (like pineapple carpaccio)
  • vanilla or coconut ice cream, to serve (optional)

Method

  1. Place the caster sugar, vanilla paste, lime juice and 50ml water into a pan and warm gently until the sugar has fully dissolved.
