These sophisticated frozen treats blend rich coconut milk with the sharp, fresh flavour of lime juice and zest. Sweetened with golden caster sugar and flavoured with vanilla bean paste, they are frozen in moulds before being rolled in toasted desiccated coconut for a delightful finish. This Caribbean-inspired dessert is perfect for a refreshing, creamy treat.

Lime and Coconut Ice Lollies

Ingredients

  • 400ml can coconut milk
  • juice 7-8 limes (you need 150ml), zest of 2
  • 140g golden caster sugar
  • 140g vanilla bean paste
  • 100g sweetened desiccated coconut

Method

  1. Combine the coconut milk, 150ml lime juice, half the zest, 140g sugar and 140g vanilla bean paste in a large bowl. Whisk until smooth. Pour the mixture into the 10 lolly mould cavities and insert a stick into each one. Place in the freezer for at least 4 hrs until completely solid.
  2. Toast 100g desiccated coconut in a dry pan, stirring often, until it colours lightly. Transfer to a plate and stir through the rest of the lime zest.
  3. Briefly submerge the mould in hot water to loosen the lollies, then gently take them out. Roll each ice lolly in the toasted coconut mixture before serving.
