Southern Style Shrimp
This Southern shrimp dish features a rich, tangy marinade made from butter, lemon juice, and Worcestershire sauce, seasoned with garlic, rosemary, and a touch of heat. Fresh shrimp are layered with lemon and onion slices before being baked. The result is a flavourful, aromatic main course that is both impressive and straightforward to prepare, perfect for a gathering of six people. The total preparation and cooking time is around 40 minutes.
Ingredients
- 1 cup butter or 1 cup margarine, melted
- 3/4 cup lemon juice
- 3/4 cup Worcestershire sauce
- 1 tablespoon salt
- 1 tablespoon fresh coarse ground black pepper
- 1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
- 2 -3 teaspoons hot sauce
- 1/8 teaspoon ground red pepper
- 3 cloves garlic, minced
- 2 1/2 lbs unpeeled large shrimp or 2 1/2 lbs shrimp (fresh or thawed frozen..we've also used peeled shrimp and it works just as well and isn't as messy t)
- 2 lemons, thinly sliced
- 1 medium onion, thinly sliced
Method
- Mix the melted butter, lemon juice, Worcestershire sauce, salt, black pepper, rosemary, hot sauce, red pepper, and minced garlic together in a small bowl.
- Give the mixture a thorough stir and then leave it to one side.
- Give the shrimp a quick rinse under cold water and allow them to drain completely.
- In a 13x9x2 inch baking dish, create alternating layers of the shrimp, thin lemon slices, and thinly sliced onion.
- Take the prepared butter mixture and pour it evenly over the layered shrimp.
- Place the dish in the oven, uncovered, and bake at 400 degrees for 20-25 minutes. The shrimp are ready when they turn pink and their shells begin to separate, remembering to baste them with the pan juices now and then.
- If you like, add a final touch by garnishing the baked shrimp with a few fresh rosemary sprigs.
