Red Snapper Grilled on Lemon, Herbs and Onions

Ingredients

  • 1 -3 lb red snapper, gut and scales removed and cleaned
  • 1 -2 sprig fresh oregano
  • 1 -2 sprig fresh rosemary
  • 1 -2 sprig fresh tarragon
  • 1 -2 sprig fresh parsley
  • 1 large lemon, sliced
  • 1 large onion, sliced
  • 3 garlic cloves, skin removed and slightly crushed
  • salt and pepper

Method

  1. Rub the garlic over the interior and exterior of the fish, then season generously with salt and pepper.
  2. Insert a selection of the fresh herb sprigs and the crushed garlic cloves into the cavity of the fish.
  3. Lightly coat the hot grill grates with a brush of olive oil to prevent sticking.
  4. Arrange the onion slices, remaining herb sprigs, and lemon slices directly on the prepared grill.
  5. Lay the seasoned fish on top of the arranged bed of lemons and onions.
  6. Lower the lid of the grill to cover the fish completely.
  7. Grill for about 10 minutes, then transfer the fish to a platter. Flip the onions and lemons, return the other side of the fish to the grill, and cook for 10 more minutes until done to your preference.
