Sourdough Pizza Crust
This recipe yields a delicious sourdough pizza crust where the starter is primarily used to impart a rich flavour profile rather than for leavening. It creates one large base, suitable for three to four servings. The method involves a simple mix, a brief rest, and a par-bake before adding your chosen toppings. The total preparation and cooking time is just 42 minutes.
Ingredients
- 1 1/2 cups sourdough starter
- 4 -5 tablespoons olive oil
- 1 teaspoon salt
- 1 1/2 cups flour (plus a little more or less to adjust consistency)
Method
- Heat your oven to 500°F.
- Combine the sourdough starter, 1 tbsp of the olive oil, salt, and flour in a bowl. Mix until it comes together into a ball, adjusting the flour amount for the right consistency. If it becomes too dry, incorporate a bit more starter.
- Let the dough sit for approximately 30 minutes. This rest is not for rising but to make the dough simpler to roll out.
- On a surface dusted with flour or a sheet of parchment paper, roll the dough to fit your pan size. Turn it as you work for a more uniform circle.
- Partially bake the base on a pizza stone or sheet for around 7 minutes, then take it out of the oven.
- Using a pastry brush, coat the entire top of the par-baked crust with the leftover olive oil before adding any sauce or toppings. This step prevents a soggy base during the final bake.
- Add your preferred toppings and return to the oven. Bake until the cheese has melted and the crust is golden brown.
- For toppings like onions or other certain vegetables, consider cooking them halfway first before placing them on the pizza to avoid an overly crunchy texture.
