Sourdough Bread
This recipe guides you through creating two loaves of classic sourdough bread. The process involves activating yeast, incorporating a sourdough starter, and a thorough kneading to develop the dough. After two separate rising periods, the loaves are baked until they achieve a light golden colour. The result is a bread with a distinctive flavour and texture, perfect fresh from the oven.
Ingredients
- 2 teaspoons sugar
- 1 1/2 cups water
- 1 (8 g) envelope active dry yeast
- 1 cup sherwood sourdough starter
- 5 1/2 cups robin hood best for bread homestyle white flour
- 2 teaspoons salt
- 1/2 teaspoon baking soda
Method
- Dissolve the sugar in warm water, then sprinkle the yeast over it. Allow this to stand for 10 minutes before giving it a good stir. Mix in the sourdough starter. Add 3 cups of the flour along with the salt, then beat the mixture with a wooden spoon or an electric mixer on a low setting for 3 minutes.
- Cover the bowl using waxed paper and a tea towel. Leave the dough to rise in a warm spot (75-85 degrees) until it has doubled in size, which should take about 1 1/2 hours.
- Mix the baking soda with 2 cups of the leftover flour. Stir this combination into the risen dough. Continue adding the rest of the flour until you have a soft dough that pulls away from the bowl's sides. Turn the dough out onto a surface dusted lightly with flour.
- Knead the dough for 10 minutes, incorporating more flour as needed until it becomes smooth, elastic, and is no longer sticky. Divide the dough into two equal halves. Cover them with a tea towel and allow them to rest for 10 minutes.
- Form each piece of dough into a round loaf shape. Place them onto a greased baking sheet. Cover the loaves with a tea towel and let them rise again until they are light and have doubled, which will take about 45 minutes.
- Bake the loaves at 375F on your oven's lower rack for 35-40 minutes, or until they turn a light golden colour.
