Sourdough Banana Bread

Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 1 large egg
- 1 cup mashed banana
- 1 cup sourdough starter
- 2 cups unbleached flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup chopped walnuts
- 1 teaspoon vanilla or 1 teaspoon grated orange rind
Method
- Blend the shortening with the sugar until creamy, then incorporate the egg and mix well.
- Mix in the mashed bananas and the sourdough starter.
- Add your choice of vanilla extract or grated orange rind.
- Combine the flour with the salt, baking powder, and baking soda.
- Fold the flour mixture and the chopped walnuts into the wet ingredients, mixing only until combined.
- Transfer the batter to a greased 9 x 5-inch loaf pan.
