saffron pickles
These kosher pickles are infused with the unique flavour of saffron. A simple brine of white wine vinegar, dry white wine, sugar and salt is heated and poured over sliced cucumbers. After chilling overnight, the pickles are ready to enjoy and will keep well for up to two weeks in the refrigerator. The entire preparation time is only 15 minutes, making it a wonderfully quick preserve.
Ingredients
- 1 cup white wine vinegar
- 1 cup dry white wine
- 1/2 cup sugar
- 1 tablespoon kosher salt
- 1/2 teaspoon crumbled saffron thread
- 2 English cucumbers, sliced 1/2 inch thick (hothouse, seedless)
Method
- Place the white wine vinegar, dry white wine, crumbled saffron, sugar and kosher salt into a medium saucepan and bring the mixture to a boil.
- Allow the vinegar mixture to cool completely to room temperature. Transfer the sliced cucumbers to a large bowl. Pour the cooled liquid over the cucumbers, cover the bowl and place it in the refrigerator to chill overnight. The finished pickles can be stored for 2 weeks.
