This kosher salmon is baked with a flavourful glaze made from fresh orange juice, brown sugar, rosemary and thyme. Orange Rosemary Salmon

Ingredients

  • canola oil cooking spray
  • 3 lbs salmon fillets
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 3 tablespoons lactose-free unsalted margarine (stick form)
  • 3 tablespoons light brown sugar, firmly packed
  • 1/3 cup orange juice, freshly squeezed
  • 2 teaspoons lemon juice, freshly squeezed
  • 1/2 large fish bouillon cube
  • 1 tablespoon chopped fresh rosemary leaf
  • 1 teaspoon chopped fresh thyme leave
  • 1/4 teaspoon salt
  • 1 teaspoon finely chopped garlic
  • 1 tablespoon orange juice, freshly squeezed (optional)

Method

  1. Heat your oven to 350:F and coat a casserole dish with cooking spray.
  2. Rinse the salmon fillets in salted water, dry them with a paper towel and arrange them in the prepared dish.
  3. Sprinkle the fish lightly with salt and freshly ground black pepper.
  4. Combine the margarine, brown sugar, orange juice, lemon juice, half a fish bouillon cube, the chopped rosemary, thyme and salt in a small saucepan.
  5. Use a fork to press down on the bouillon cube to help it dissolve into the mixture.
  6. Place the saucepan over heat and bring the contents to a boil.
  7. Cook the sauce until it thickens to a syrupy consistency, then mix in the chopped garlic and take the pan off the heat.
  8. Pour most of the warm sauce over the salmon, ensuring you save two to three tablespoons for later.
  9. Bake the salmon without a cover for 12 to 15 minutes, until the flesh is opaque all the way through.
  10. Take the dish from the oven and adjust the oven setting to broil.
  11. Spoon the reserved sauce over the top of the baked salmon and move the dish to the top rack of the oven.
  12. Broil the salmon for 1 to 2 minutes, just until the edges start to turn golden brown. If your saved sauce has thickened too much, stir in an optional tablespoon of orange juice to loosen it.
  13. Serve the salmon straight away while it is hot.
